New Orleans has two signature cocktails and they want opposite things from you. The French 75 is bright, cold, and built for a balcony. The Sazerac is rye, bitters, and an absinthe rinse — a slow drink for a dark room. If you only have one happy hour in the French Quarter, this is how to pick.
The two drinks
The French 75 is gin (or cognac), lemon, sugar, and sparkling wine, served up. The Sazerac is rye whiskey stirred with sugar and Peychaud's bitters, strained into an absinthe-rinsed glass and garnished with lemon peel. The Sazerac House in the Quarter traces the drink to 19th-century New Orleans coffee-house culture, where it is now the city's officially designated cocktail.
Where happy hour actually touches them
Tableau, overlooking Jackson Square at 616 St. Peter Street, posts balcony happy hour Wednesday through Sunday, 3–6 PM — and names a $7 French 75 (gin or cognac), plus a $7 classic lime daiquiri and $7 sparkling rosé, against $4 private-label wine. That is one of the only Quarter happy hours that prints a named price on a French 75. Across the Square, Muriel's Jackson Square at 801 Chartres posts Monday–Friday 3–5 PM with $5 well drinks, $5 wine specials, and $5 sangria — a cheaper rail, but no named Sazerac or French 75 on the page.

Before 6 PM on a balcony: French 75 at Tableau, while the $7 window is live. After dinner or at the bar: Sazerac at menu price — it is the city's drink, but nobody on our cited pages discounts one by name, so don't hunt a deal that isn't posted. A third option: Couvant in the CBD posts $7 wine, cocktails, and spritzes Tuesday–Saturday 5–7 at the bar. Either way, check On now before you walk: the Tableau window is Wed–Sun afternoons only, and Muriel's weekday rail ends at 5.
